if you do /mode #chan you get this output:

01:36:39  * Channel #Chan mode: +ntrS
01:36:39  * Channel #Chan was created on Sun Jan 03 22:30:35 UTC 2012

Is there any way of getting services to update the channel "creation date" with the services
date, example: Registered: Oct 12 15:34:11 2010 GMT Daylight Time

so if you did /mode #chan it would report the channel registration date.

I'd assume services would need to update the "ircd channel creation date" somehow,
is this even possible, and if so, please could someone write me a script to do this.

1.9 will do this *if* the channel is persistent. My m_permchan module for 1.8 does this + other things, http://modules.anope.org/index.php?page=view&id=186. 1.8 by itself can't do this though.
