I found the noexpire option in OperServ but I was wondering if there is one that can be set for individual nicks/channels?

No.. that is a global setting, /ns saset <nick> noexpire  /cs set <chan> noexpire

MicroLord:
if saset dont work you must load it
/msg operserv modload ns_saset

Then you can use
/msg nickserv saset <nick> noexpire on
